Produced in Val d'Ossola, exclusively in the alpine pastures of the Antigorio-Formazza valleys (Piedmont), Bettelmatt is a very rare cheese with an ancient tradition. Since the XIIIth century the local walser people used it as commodity or to pay rents and duties.Thanks to the particular richness of the pastures where it is produced during the summer season (all located over 1.800 metres altitude), Bettelmatt is a cheese full of perfumes and has a sweet but intense taste.
The semi-cooked texture has a strong yellow colour and can be suffused with small eyes.The genuine Bettelmatt is branded and its edges indicate date of production, name of the pasture it comes from and CEE code of the dairy factory.
